Millet pancakes

 

 

 

Cooking time 50 minutes plus fermentation.

Ingredients for 4 servings:

wheat flour 2 cups

millet 2 cups

milk 6 cups

yeast 25 g

butter 100 g

eggs 5

sugar 0.5 tsp

salt to taste

vegetable oil 1 tbsp.

 

Dissolve the yeast in two glasses of warm milk, add flour and knead the dough.

Leave the dough in a warm place to rise for 1-1.5 hours.

Cook porridge from millet using the remaining milk. Cool, add the yolks, mashed with salt and sugar, and the remaining melted butter.

Combine the porridge with the dough and let the dough rise again.

Add the whipped egg s to the dough and mix gently. Leave it for 15-20 minutes.

Bake the pancakes on both sides until golden brown in a hot greased frying pan. Serve with butter or sour cream.
